Shredded Carrot & Kale Salad with Orange Vinaigrette

Ingredients
4 large carrots, peeled and julienned
1/2 cup bacon pieces, cooked
1/2 cup feta crumbles
1 bag Fresh Express Sweet Kale Mix
1/3 cup orange juice
3 Tbs white wine vinegar
2 tsp Dijon mustard
1 tsp honey
1/2 tsp salt
1/2 tsp cracked black pepper
1/3 cup extra virgin olive oil
Directions
- In a large bowl, combine carrots, bacon, feta and salad mix. In a measuring cup, combine remaining ingredients; whisk to incorporate. Pour over the carrot mixture, and use tongs to coat salad completely. Serve immediately. If making in advance, wait until serving to add vinaigrette.
